A few recipes

These last few days we got the chance to taste some very nice Paleo and Paleo friendly dishes and here are the recipes:

Madalina’s filled tomatoes as seen at the Paleo Party

  • cherry tomatoes or small variety of tomatoes carved inside
  • tuna mixed with herbs (parsley, coriander) and mayo
  • fill the gaps..

Also Madalina’s “lapin rotti dans leurs ognions confits à cuisson lente”

  • part a whole rabbit, season the pieces and fry them in olive oil until they start to get brown
  • chop length wise 3 kg of onions add a leaf of laurel, salt, pepper and fry it all in olive oil until the onions get tender
  • in an iron cast saucepan lay a first layer of onions, 125g of black olives and the rabbit, then cover with the rest of the onions and 125g of black olives
  • pour 1l of red wine
  • cover and let it roast at 120° for 7-8 hours, go to CrossFit Léman for a WOD in the mean time

And the last but not the least the homemade Nutella as seen at the Paleo Party

  • roast a cup (or more) of hazelnuts at 150° for 20 min
  • in a food processor combine the hazelnuts, olive oil (colza oil), honey and a table spoon of unsweetened dark cocoa powder
  • it will take some time to grind all the nuts so just keep adding oil until the desired consistency is obtained, chunky is good too
