For me winter holidays are always associated with the smell of spices in the air. Cinnamon, anis, orange, mixed in to make lovely biscuits and cakes. To stay Paleo I got these same spices and made a great apple spice cake. Here’s what you need for it:
- 1/2 cup of melted coconut fat mixed with
- 1/3 cup honey or less
- 3-4 eggs
- 2 ts vanilla essence
- 1/4 cup coconut milk
- 1 cup or more of apple sauce (cooked and mashed apples)
- 2 cups of almond flour
- 2 ts baking soda
- 1/2 packet of “Epices pour pain d’épice” from Coop or 2 Ts of a mix of cinnamon, star anise, anise, coriander, ground cloves and nutmeg
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins
Serve it with a spoonful of coconut milk and Enjoy!
