Paleo Pecan Pie

It is about time that I posted something on this blog. So here we go after some down time and up time with my birthday celebration I want to share with you this absolutely fabulous recipe of Paleo Pecan Pie. Well, all the ingredients are Paleo but this this is actually a bomb. Here we go:

For the Pecans on top of the cake:

  • beat 1 egg white until fluffy
  • add 250g of pecan nuts
  • 1ts of cinnamon
  • 1ts ginger
  • 1/2ts nutmeg
  • 1Ts honey

Combine all and place on a tray with some greaseproof paper. Put it in the oven at 120°C for 1h, maybe more turning every 20 min to let it caramelize. When ready leave it to cool in a glass bowl (because very sticky) and in the mean time get the other things ready.

For the filling:

  • 300g of Medjool Dates
  • 300g of prunes, pit removed
  • 250g of pecans

Soak the dates and prunes in warm water for an hour, they’ll get very soft and easy to work with. After an hour place dates and prunes in a food processor or a blender and blend them until you get a creamy consistency. Use the water to help the blending. It could help to precut them in smaller chunks it you have an old blender. Do not worry about the small bits they add some texture to the filling.

For the base:

  • 1 1/4 cups almond meal
  • ~1/2 cup Coconut flour
  • 2/3 cup Walnut oil
  • 1 Ts of baking soda
  • 5 Ts of icy water
  • 1 egg

The consistency should be pretty thick after mixing all the ingredients together in a bowl. Chose the dish of your choice, it can be round, rectangular or else. Lay a sheet of greaseproof paper in the bottom. Spread the mixture and make it flat. Put in a preheated oven at 180°C for 20 min (depending on the thickness). After that leave it to cool down.

When all of this is ready take the cooled down base lay the 250g of pecans from the filling then lay the date and prune filling, even it out and then place the caramelized pecans on top.

Adapt the quantities according to the number of guests. I used the double amount for the birthday party.

This is a very rich desert and should not be consumed on a daly basis but once in a while like for a big date ;)
