Tatin à la Paleo.

A well appreciated desert originated in Sologne, France called Tarte Tatin has now a Paleo version. You will need :

  • Preheat the oven at 180°C
  • 4 apples, peal them and cook them in a pan until tender. Pour them into an oven dish
  • If you choose a sweet tasting variety you won’t need to add any honey but you can drizzle a bit as you cook them
  • in a bowl mix 1,5-2 cups of ground almonds with
  • 4-6 eggs
  • adding a touch of honey
  • The mixture should be quiet thick so start with the almonds and add the eggs. Make enough to cover the apples.
  • Pour the mixture on the apples and spread equally on the surface.
  • Let it bake for 30 min approximately
  • I added some frozen blueberries on the apples.

As a real treat top it up with coconut milk.

Thai meat balls

And here we go again with our delicious Paleo cooking mode.

Today we’re making Thai meat balls, they are very easy to make and are very tasty. To make them you will need:

  • 500g ground pork
  • 300g big prawns cout into small pieces
  • 2 Ts freshly grated ginger (you can also cut into small pieces)
  • 2 Ts of fresh coriander chopped
  • 1 Ts of fish sauce
  • 1-2 eggs to make it stick together
  • some pepper

Combine all the ingredients in a big bowl, mix well, form them into bite size balls and fry them in a bit of olive oil on medium heat.

It’s that easy and all my kids love them. Serve it with salad or some broiled chinese cabbage.

Genolier boucherie

In the Genolier Boucherie I found a good choice of local meats and starting yesterday they’re selling pork raised primarily on vegetables. This is to say that its a good quality pork with a better ratio of Omega 3/Omega 6 oils. Much better for us than grain fed ones.

A hunters meal

Just came back from holidays in Scotland with my family with a few meal ideas to take with you in the pocket.

For my hunting days I packed almonds, dried mangoes and some deer jerky. The meat was brought to us by a friend from The States, but do not worry I managed to get a recipe to reproduce.

To make jerky from a wild animal you have to soak the meat first for a day in cold water to get the blood and the gamy smell out. Cut the meat in thin stripes and after that marinate it for 2 days in seasoning of you choice. For this jerky Scott used soy sauce, Worchester sauce, dried garlic, pepper, lemon juice to tenderize the meat. After the 2 days you can dry it in a dehydrator or in the oven, for the time it will depend on the size of the stripes, somewhere between 3-6 hours.

Don’t be afraid to try out new spices and mixing them, I found that cooking Paleo meals it can’t go wrong that often, really.

Paleo goes on the fast track.

Fast food in Paleo version. I present you the Paleo burger. For this you will need:

  • 500g of ground beef, get it grass fed if you can and low fat content
  • mix with chopped onion, garlic, herbs, 1 egg
  • make burgers and fry them in a bit of olive oil
  • wash salad leaves, cut some tomatoes and cucumber
  • ask Gretchen for her homemade ketchup recipe
  • get Omega 3 mayo from Coop
  • lay salad on a plate, put the burger on top, spread mayo and ketchup, finish with tomato, cucumber and another salad leaf

An other Paleo Challenge goes by.

Here we are at the end of another Paleo Challenge. I can already say that our winners are all losers! Well done to everybody for your commitment that are rewarded by the way you feel now and will from now on. You will find that you get a vey functional body with low fat percentage, therefor lower the risk for serious health problems such as obesity, diabetes, hypertension and really just get overall healthier. It will show through your performance in general at the gym or in the everyday life, your well being and also your mental state. Because with a healthy body goes a healthy mind. The looks are really just a bonus to the Paleo lifestyle.

I can talk about it for a while but you’re really going to have to try it for yourself. So who’s up for the next life transforming experience?

Craving bread? Here's the Paleo fix

Here is another reason why we can strive on a Paleo diet. Some people might be craving foods that are common in our society and that bring up a nostalgic craving for something that we were used to eating without knowing the consequences of it, like bread. With this your frustration is soon to be over.

I present you a healthy substitute for bread. To make it you will need:

  • to roast a cut of pine nuts or almond at 150° for 30-40 min, when cooled
  • add to the food processor with a handful of basil,
  • 2-3 Ts of olive oil
  • 2 crushed garlic gloves (you can roast them the avoid the strong tasting of it)
  • 500g of frozen whole leaves spinach, defreeze, squeeze water out, chop up and add to the mixture
  • whiz until it looks like a paste, then add
  • 4 eggs and whiz some more
  • lay it out on grease proof paper
  • sprinkle some sea salt, pepper, herbs or even chillies (like what we had at the Dragon Boat race thanks to Gretchen)
  • bake for 30-40 min at 175°C
  • and then make lovely sandwiches or egg muffins or let it dry to make crackers.

Locally grown and made.

It’s always nice if you know where your food is coming from. So a few days ago I went to the local farm market in Nyon the Panier Gourmand and got veggies and then to the local butcher for some local grown meat and eggs. It’s always funny to watch people’s expressions when I ask them what their animals eat. For the cows I often hear grass and cereals, for pork whey and wheat and for the chickens also grains.

Why so much fuss about what they eat? Because of the quality of the meat that you get from naturally raised animals that is what they’re genetically meant to eat. The fat content is different, the Omega 3 Omega 6 ration is better lower. And of course antibiotic free.

And there is hope to get some animals that eat just grass in summer such as from the Genolier farm where you can get meat that was extensively raised at least in summer. For this one you can get on a list and get some meat in November. I also found a local butcher in Genolier as well that told me they would get some pork that was raised on vegetables. Stay tuned for this one.

So from my gathering I got this breakfast for my cavemen:

  • red peppers from the farm
  • antibiotic free and happy pig sausages
  • free! range eggs from Marchissy

Get wild

When shopping I always look on what’s on sale especially if it’s wild fish or game meat. Today I got lucky with Snapper a very tasty fish. I asked for the fillets to be removed but I always keep the remaining and make a soup with it. For the fillet I cooked it with:

  • fresh ginger sliced in thin strips fried in a bit of olive oil and onion
  • when it’s all tender add the fillets and cook for 5 min on each side. Do not overcook as it gets rubbery
  • Fix some veggies on the side such as zucchini with dried tomatoes.

Happy 1st Anniversary CrossFit Léman!!!

Dear friends and athletes, I would like to thank you for joining us on this special occasion that is the 1st anniversary of CrossFit Léman and Euan’s birthday. On this occasion we of course had a Paleo Chocolate cake and champagne. And here is the recipe for it. I made enough for 30-35 people and for that I baked 2 lots of rectangular cake, for each one you will need:

  • 2 cups of almond flour
  • 1.5 cups of unsweetened cocoa powder
  • 3 ts baking powder (for gluten free just use the soda)
  • 3 ts of baking soda
  • 4-5 eggs
  • 2 cups coconut milk
  • 1 cup honey (liquid)
  • 4 ts vanilla extract
  • 3/4 cup of coconut oil (melted)
  • 1 cup of chopped walnuts
  • Mix all the dry ingredients and set aside. Then mix all wet ingredients and incorporate to the dry. Mix well and pour into the pan previously greased with coconut fat.
  • Cook for 30-40 min at 175°C
  • coconut flakes for decorating

For the Paleo icing I used:

  • 2 cups of coconut fat
  • 3 Ts of honey
  • 2 Ts unwseetened cocoa powder
  • Put all the ingredients on a plate and stir them in with a fork untill they’re all combined.

A special celebration is rare and we can enjoy such a treat especially that it’s wheat and dairy free. Nevertheless, it’s loaded with calories coming from coconut fat, nuts and honey. Bearing that in mind enjoy, it is so delicious!
